Japanese Local B-Class Gourmet in Kushiro in Hokkaido

I live in Hokkaido, northern island of Japan and have guests from all over the world.
I decided to share Jpanease food information with you and also to focus on local B-Class Gourment because I noticed threre was a big demand for tourists to eat good food in Japan.
As you know Japanese cuisine was resistered as World Intangible Cultural Heritage in 2013 so Japanese food became very popular in the world in these days.
Such as 鮨(sushi), 天婦羅(Tempura) , うどん(Udon), そば(Soba), 鰻(Unagi), 餅(mochi), 玉子焼き(Tamagoyaki) are everywhere in the world and they are considered as healty meals and surpress lifestyle-related deseases.
Japan has variety of traditional food and there are not only famous ones above but also thousands of Local B-Class Gourmet. Local B-Class Gourmet is also everywhere in Japan and even every city, region, prefecture has local specialty.
They are always affordable prices, delicious and related to local ingredients which are normally used to cook them.
If you try local B-Class Gourmet you can understand real dietary culture of area in Japan.
Let me begin with my home town, 釧路(Kushiro) in Hokkaido.
Kushiro city in Hokkaido
Kushiro city is located at eastern Hokkaido and popular for fishing industry.
There are variety of fresh seafood to eat!
Kushiro area has 2 national parks, Kushiro wetland national park and Mashu-Akan national park.
Around 2,000 Japanese red crested cranes inhabit in the wetland and Kushiro is the only area to see Japanese cranes in Japan.

Katte Don, bowl of rice with slices of fresh seafood is originally from Kushiro city.
You are requested to buy a bowl of rice at first then, you move to different shops to choose and buy your fish.
Shops sell slices of fish one by one so there are unlimited options for you!
You can choose and top whatever you like.
Shops are available in Kushiro Washo Fish market.

Sanmanma

Sanmanma is the abbrebiation of Sanma ( a sleder long-beaked fish called saury ) & manma ( it means rice or meal ).
Kushiro is popular for saury fish and its taste is unforgettable once you try.
Sanmanma is a kind of Sushi but rice is not vinegared and also fish is not raw.
Two types of rice are used to cook, normal rice for eating harvested in Hokkaido & sticky rice for Mochi, rice cake. They are mixed and cooked with soy sauce based broth.
Saury fish are throughly cleaned and small bones are totally removed. They fish are broiled with charcoal fire.
Grilled fish are combined with cooked rice balls. Shiso ( called perilla leaves ) are sandwiched between fish and rice.
Sanmanma is actually fantastic and you cannot miss it.

Supa-Katsu
Supa-Katsu is the abbreviation of spaghetti bolognese with breaded pork cutlet.
This is served on the piping hot iron plate at Izumiya resutaurant.
Served on the piping hot plate is local Kushiro style to keep pasta warm in harsh winter.

Tsubu-Yaki
Tsubu-yaki, grilled welks are soul food among Kushiro people.
They are carefully cleaned and their internal organs are throughly removed. Then, they are rubbed and rinsed in order to get rid of slime of shell fish.
Finally they are grilled with charcoal fire while the master chef fils up shells with soy sauce based broth again and again.
Welks are served on special woodern plates and also the shop offers take-away service.

Kushiro style ramen

Kushiro has original style of ramen noodles.
It is soy sauce flavored fish & chicken based soup with onions.
The soup is nornally very clear and light. Noodles are also light and very thin.
Kushiro style ramen is easy to eat and popular after drinking party.
One of the most famous and authentic Kushiro style ramen restaurants in Kushiro is Kawamura. The restaurant is founded in 1989 and located at down town.
If you like to try traditional taste of Kushiro ramen Kawamura is good option.

Robata Yaki
Robata-yaki style is local specialty in Kushiro.
Robata-yaki Renga is highly recommended to try this style.
There are some theories where the Robatayaki style originally comes.
I am from Kushiro city so I believe the Robata style was established in Kushiro.
Robatayaki is the style that your food is cooked on the grill in front of you by your chef and this is the authentic & original style.
However, there is new and easier style in these days.
You sit on the table seats where your grill with charcoal fire is installed and you can grill your food by yourself.
